今天是腌制咸鱼。很幸运,今天中午是今年第一次去CAMBRIDGE的河段钓鱼;收获一条16寸半长的bass。ld建议做咸鱼。(见图) (水城百事)

做法:将鱼刨开成扇形,两面放盐后,用竹签撑起;风吹、晾晒2-3天,硬成板状就好了。切下一段清洗一下入盘,放上姜葱油上锅蒸8-10分钟即可。

苍蝇唾液含蛋白酶,可以把蛋白质分解成蛋白胨,然后进一步分解为氨基酸,这样才有鲜味(味精也是这个原理)

真正的腌疙瘩头是要在咸菜缸里,敞开口过夏天,苍蝇在里面产卵,最后水面上白白的一层蠕动的蛆,在苋菜上拱来拱去。这样的才正宗,而且咸菜最后软软的,很香。

我们这是珠海做法:讲究的话,要先用盐水浸泡半天,使鱼体内的血水完全渗出,再晾晒3-5天;绝对美味极品,口感极佳。
