肉馅清洗技术-用盆子接适合直饮的清水,然后把肉馅充分搅散在水里,浸泡约3-5分钟即可。此时会有较多的血水从肉馅里渗出,整盆水略有血色味道较腥。然后取一勺状细孔滤网,把肉馅捞出置于滤网上,用手掌或者拳头按压挤去血水。然后把挤得相对干的肉馅饼子扣在干净的容器里,反复次步骤直至肉馅都滤掉血水。此时的肉馅呈现浅粉色,比较买来的生肉馅颜色更淡,味道也没那么腥。
